Because a pregnant woman has to have her fix . . .

 
I would like to thank the following people, places, entities, etc., for allowing this pregnant mama to fulfill a late-pregnancy craving:
  • Publix*
  • Mrs. Baird’s** 
  • My mother (for discovering the recipe in the first place)
  • And last, but not least, WikiHow.  Without this link, I may not have been able to indulge myself in this yummy sandwich goodness.  That jar of pimentos was quite stubborn.

Publix Pimento Cheese Spread
  • 1 1/2 lbs medium cheddar cheese, grated (I personally use sharp)
  • 2 cups Publix salad dressing (since I sadly live far from the nearest Publix, I make do with Miracle Whip)
  • 4 oz jar pimentos, minced, undrained
  • 1 tsp sugar (not necessarily needed if you use Miracle Whip)
  • 1/2 tsp salt
In a medium bowl, combine all ingredients and mix thoroughly.  Cover and refrigerate.  Serve well chilled between two slices of the bread of your choice.  Makes 5 cups.

*Publix is the best. grocery. story. ever.  Enough said.
** Mrs. Baird’s is “Texas Born, Texas Bread.”  Hehehe . . . .

  1. My pregnancy fix was a whole lot easier than yours (but yours seems healthier!) I completely craved ice cream and could have eaten it morning, noon, and night (although my waistline wouldn’t have dreamed of doing that!) :) I can’t wait till your little one comes :)

  2. Can I tell you a secret? I love pimento cheese sandwiches, but a GRILLED pimento cheese sandwish is beyond good…it is divine! Give it a try, you won’t be sorry. :)
